Tokaji

Tokaji (also written Tokay) refers to wines produced in the Tokaj wine region of north-eastern Hungary, a UNESCO World Heritage Site. The region is most famous for Tokaji Aszú, a sweet wine made from botrytised grapes that has been celebrated since the 17th century.

Tokaji Aszú and the puttonyos system

Tokaji Aszú is classified by the number of puttonyos (baskets) of botrytised grape paste added per barrel of base wine, historically ranging from 3 to 6 puttonyos. The higher the number, the sweeter and more concentrated the wine. A Tokaji Eszencia — made almost entirely from free-run juice of botrytised grapes — is the rarest and sweetest expression.
